WSM angst

I am looking out the back window towards my 2 WSM's (22.5 & 14.5, oh and mini) sitting in the snow, and feeling guilty that I am ignoring them. The wife insisted the turkey be done inside yesterday, 15 lbs for the 4 of us so we have tons left over. I had thought of a butt or something this weekend but the problem is time, Saturday I am totally tied up, although may have time to design a wind screen/heat wrap from a roll of water heater blanket I got, but today and tomorrow are left over turkey. Sunday, might have been the day but they are talking rain and ice, plus my local club is having a Military shoot and I want to try my Mosin 1938 carbine, although MAYBE it will be Sunday as I would rather cook in the rain and ice than go shooting in the rain and ice!

I am having WSM withdrawal! and they look so lonely out there with their covers on!
 
Jeff, box up the 14.5 and send it to me. I'll PM my address. I'll send pictures weekly of it NOT BEING lonely, full of good stuff! It will be in a good home that barely see's any snow!

I hear ya , man. I bought some beef ribs the other night and I'm trying to figure out when I'm going to throw them on the WSM . Haven't smoked anything in waaaaaay too long. Have a good New Years buddy.
 
I hear ya. Even though we have no snow, I was thinkin the same thing about the WSM(s) yesterday. I did uncover them and clean/check them out. The last time they were used was Thanksgiving because I did the Christmas standing rib roast on the kettle. I am going to have to fire at least one of the up this weekend.

Anyone that wants my 14.5, well... if you show up at my house I will give it to you, if you can get past the dog (1/2 rottweiler)... just kidding - if you show up at the house and bring you own meat I will let you use it as long as you cook some for me LOL

I tried to talk the wife into us doing the ham for New Years on one of the WSM's but I don't know if she trusts me, she said she is going to do it in the oven.
 
Jeff, sweet-talk your lovely bride into letting you smoke a ham, with a baste/glaze along these lines:

On stovetop, mix and reduce some combination of the following... Apple Juice, Brown Sugar, Honey, Crushed Chilies, Orange Marmalade, and a healthy dose of Captain Morgan's (or your rum of choice).

I'm by no means an expert cook of any kind, but this turned out a really nice glaze at Thanksgiving. Went over well with the in-laws and the out-laws, so appealed to a pretty wide variety of tastes. And I'm sure I did some stuff "wrong" by the book, but I never really liked the taste of books, too chewy. But here's what I did. Start with half of saucepan full of apple juice (or apple cider). Then add the other crap to taste. Add some of everything in relatively small portions, then start tasting and adding stuff til you get something that works. Add small amounts of rum early on, then quite a bit right at the end. Booze will cook off some in smoker, and won't penetrate into meat much, so don't skimp on the rum.

I'm sure this is a common simple recipe, and can be modified a million ways... Orange Juice as base? Peach preserves instead of orange marmalade? All honey and no brown sugar? All brown sugar and no honey? Heat/spice source other than the crushed chilies? Bourbon instead of rum? Tequila(if you so inclined-none for me thanks)? Cloves!? Cinnamon?

Fruit juice + sweet + heat(spice&temp) + booze = a happy pig.

Come on Jeff you have to do the ham. You can't start the year not cooking anything. :wsm:
 
Yeah Jeff do the ham...just use the Captain Morgans with some Coke to begin with...after 4/5 your wife won't even realize your cooking outside on the WSM. Then use the rest for the Ham glaze.
 
Been minus 18F up here so I hadn't cooked in a while either. Just too cold to bother. Did the Christmas turkey on thee kettle though, it warmed up for Christmas. :)

We are a balmy 20, going up to 33! Found out the wife really doesn't like smoked food or pulled pork, she said once or twice a year is enough, luckily my 3 grown boys do like it and will come over.
I think I might to a pork butt or some ribs on the 14.5 along with letting the wife do the ham inside.

I have some of the water heater wrap that I want to modify for each smoker. This is my first winter with the WSM's, I always grill on the Silver B all winter, shoveling a path to it.
