WSM-18 Upgrade and First Cook


 
I added a probe port today to my $100 new (used) cooker then decided to take it for a test run before our big July 4th shindig. Had some babybacks in the freezer so thought i'd see how it cooks. Did pretty good overall, holding 230-240 for 5-6 hours, which was plenty to finish the cook. Ribs came out pretty good, though my meat thermometer quit working around 180ish, I was able to thermopen them home

Ribs look good!

I have the same Hunsaker thermometer holder on my 14.5 WSMs and they’re a game changer for me. No more accidentally sending the unit flying off a nearby table because I forgot to unplug the probes and decided to move the WSM middle section.

Only thing I don’t like is that the original cover included with the WSM becomes a bit too tight with the Hunsaker holder on, but you might not have that problem with your new-to-you WSM.

I agree it was the best solution for the money I could find for the two things you gotta have: A temp mount and a place to hang your thongs. Funny you mentioned the Weber cover not fitting, cuz thats the first thing I had to replace on the "new-to-me" WSM as the original had shrunk over time. The good news it does fit on my backup, an old Brinkmann 16" Smoke-n-grill :)

Thanks but I already have a table and still prefer the no drill kit from Cajun Bandit that replaces the legs and includes barrel clamps
