Wsk kushiyaki

I'm trying to brainstorm a convenient method for kushiyaki/ yakitori on the wsk.

ordered some enders skewers that come with stainless rails. anticipating these will not work well and the rails will flop around since they're not secured anywhere

might also pick up a pair of firebricks to use as skewer racks. the standard firebricks here are just a tiny bit too low sitting on the top charcoal grate, ideal would be they sit flush or just a riny bit higher than the outer rim of wsk. maybe i'll see if they have some thinner ones to stack. if that works then i could use handled grillmer skewers, handles sitting outside the rim for easy turning.

looking for high heat low ash fuel as well.

last cook used the weber baskets on the upper coal grate. lots of ash flying around everywhere. i usually use the lower grate and have less issue with flying ash.

who has ideas?

i did a test run using ender 'swords'. they hold onions well. the above pics do not really look like kushiyaki. from basic reading so far you want smaller size meat, very hot coal that does not flare and very close proximity of meat to coal, like 1 or 2 inches. swords will solve the spinning meat problem. will try JD. just have to figure out how to get 1-2" proximity.

these heavy duty skewers look like they are for what's called mangal style pits.

ender rails are heavy duty so they might not be as flimsy and move around as i thought. they looks similar to the goutime you linked,
