wow... my WSM is crazy efficient with coal!

Just switch from cheap offset. Been using up my lump charcoal (royal oak). In 4-5 cooks, I feel liks I've used as much coal as my old offset would burn thru in one 4 hour cook! Thrilled with this so far :)

Attempting a turkey this weekend... in the rain, it seems...
 
If it's raining at least put a beach umbrella over it. If not rain will get in between lid and center section. You're gonna love overnight cooks when you can sleep all night instead of getting up every 2 hours to add charcoal. 12 hour cooks are easy in the WSM you can go even longer if you use a different (shallower) water pan allowing more room for charcoal.
 
Air control = slow burn.

Cheap offsets are notoriously for leaking air and thin metal that doesnt hold heat.
