I thawed some Wild Silver Salmon from Sitka Alaska. Made a dry brine, mixed it, and covered the fillet over night in the fridge. I rinsed the brine off with cold water, air dried, and smoke with Alder wood chips. I kept the temps as low as possible, about an hr or so later, the fish was done. The Salmon tasted great!
