Wild Silver Salmon

I thawed some Wild Silver Salmon from Sitka Alaska. Made a dry brine, mixed it, and covered the fillet over night in the fridge. I rinsed the brine off with cold water, air dried, and smoke with Alder wood chips. I kept the temps as low as possible, about an hr or so later, the fish was done. The Salmon tasted great! Here are the pics.

On my way, Michael! I need an excuse to visit my brother in Temecula anyway! :)

Looks great! Did you catch it yourself?

I remember you cooked some of this a couple of weeks ago. This looks equally as gorgeous Michael. I was wondering also, your catch or internet order?

The Alaska fish was a gift from a friend of mine who when fishing there last year. All I have left now is a nice big chunk of King Salmon fillet, and good size halibut fillet. 3 yrs ago, I did go fishing in Ketchikan, fish two days, got my limits, completed one of my bucket list :). I would love to go back to Alaska to do some more fishing. I was in San Francisco last weekend, one of the charter fishing boats near Pier 39 were unloading a lot of Pacific King Salmon. I wish I was on that boat!
