Who says it doesn't rain in Tucson?

So I have done several briskets and such in my WSM, but all were overnight cooks. I decided to try a high heat and this is what I get:

Now I always have a hard time getting high heat out of it, so the door was a little open (note the twine) which worked great until the rain put the charcoal out, so I transferred the brisket over to the gas grill.

At this point it had been in foil for about an hour, so I figure the gas grill would be better than the 200 degree smoker.

We'll see how it turns out.

PS - had about a 3 minute warning before the sky let loose for about 45 minutes.

The Milwaukee area could use that rain.
good luck with your cook!

at this point, i'd be dancing in that rain...

The bottom 1/8" was turned to carbon on the gasser. I just sliced it off.

The rest was nice and tender, just kind of flavorless, but that is what sauce if for.
