Just curious is there an advantage to doing it the night before? I made my rub today for tomorrows smoked brisket. Was thinking about doing it tonight to let it soak in a bit. What are your thoughts? Vince
Vince, it's just personal prefference. I never do, but you can if you want. Try it once the night before, and the next time try it while the coals are lighting. Use the same rub on both briskets to see if you notice a difference.
Thanks Bryan. I did not rub the night before. I am going to do it here in a bit for a HH cook I'm doing today. I was thinking about using a little perins before the rub to help make a paste. Decisions decisions!
