When should I buy my Brisket

I want to do a big cook on Memorial Day. I'm pretty certain that a whole lot of other people will be doing the same. I am curious as to when would be the perfect time to buy a Waygu or Prime Brisket. I do want to buy to soon and lose to much quality, but I do not want to buy to late and they run out or I am paying an extra premium. So for those who have been at it for a while, any thoughts?

Thanks

I have zero exp with Waygu or Prime packers, but as long as it's still in a cryovac package you could buy now (or when the price is right) and freeze till later.
Just a thought.

A lot of competition guys "wet age" briskets up to 60 days. The risk there is that if the cryopack is compromised in any way, you have to cook it immediately or throw it out. Also you need a refrigerator that isn't commonly used so it will hold a barely-above-freezing temp better, or the brisket will go bad sooner.

IF you know that the brisket has never been frozen, I'd probably order 2-3 weeks early and call it good. If you know that it IS frozen at some point (and I think a lot of Wagyu brisket is), I'd be sure it arrived frozen and store it in the freezer until a week or two before the cook, then let it thaw slowly in the fridge.

I'm with the freezer idea if the price is right. And will need your address for the party ;) if your doing a big cook. I'm only 3 hours or so away.

Freezer. Cryovac'd (vacuum packed) meat freezes very well. Your only other option is knowing a butcher and working with him to have it available when you need it. Personally, I buy my big meats from Sam's and they usually have what I want in stock, but you are right to be concerned about going to the store the week before Memorial day and think you're going to get a good deal or even have much to choose from.
