when do you insert your temp probes into your wsm

Hi all, i have a 18.5 wsm with the silicone grommet for temp probes (2014 model). The thermometer i use is a maverick et733 (it has 2 temp probes with wires that connect to a transmitter). I was wondering when you guys insert your probes. I have had 2 smokes so far and my process is to insert the probes after ive stacked the middle section over the newly lit coals. This usually results in a face full of heat and smoke (whether or not the wood chunks are in). Seems like it is harder to insert the probes into the grommet while the middle section is not over the charcoals as that would mean that youd have the transmitter dangling beside the middle section. How do you guys do it? Thanks!

My 14.5" has a grommet in it. I set up the probes while the mid section is off to the side while the coals are in the chimney coming up to temp. Then I plug them into the sending unit when it's assembled. It's kind of a pain.

I cut a notch in the upper lip of the 22.5" center section and simply lay the wires in it when I'm ready.
 
I do the same as Dwain. I put in the water pan, bottom grate, then the wires. Once the coals are set up I put the two halves together, and set the grate probe up. Next I add water to the pan with my watering can. now I add my meat, and insert the other probe. Then I attach them to the Maverick and turn them on.
 
I have the grommet model.
I stick both of the wires through while the midsection is off to the side.
Plug the probes into the thermometer, the meat, and on the grate after the midsection goes onto the bottom section.
Then the lid goes on.
 
My 14.5" has the grommet. After using it once, I cut a notch in the top of the barrel like I did on my 18.5 and my Mini-Joe. I am now MUCH happier. I put the BBQ probe on when I assemble the smoker after it's lit. When the meat goes on the meat probe is in it.

Thanks Dwain, Mark, Charles, Robert. I had been attaching the probes to the thermometer after stringing them through the grommet. Was initially scared that the wires would catch on to something - get yanked- and break. but my way is a pain. Ill try yours. @Dwain, Robert- the cut notch seems like a way better idea. I might end up doing that eventually.
