I know, I know, anything on the grill/smoker. But seriously if you could only do one meal for a lot of people minimum 8 up to 20 people on the grill what would it be?

I think a pork butt, baked beans and slaw are about the perfect meal.
Inexpensive, easy, and everyone will think you are AWSOME!

Thoughts?

J,the menu you posted would be great. Nice and easy,a lot that you can do ahead of time. For a smaller number (8-10) burgers are a great meal too. Offer different cheeses and you've got a winner!

Jim we cook that meal almost every Sat at hunting camp, as you said good, can be cooked ahead,& cheap!
For variety we will substitute, potato salad , or turnip greens & cornbread for the sides. For a small group (4) I'll cook BB ribs, but not in the budget for a bigger group.
If you have room on the smoker cook smoked beans, a great twist.

If you can find flank steak on sale, I would suggest fajitas. You can do chicken and steak. Saute some peppers, throw out some diced tomatoes, guacamole, salsa, sour cream, lettuce, and what ever else you want. Everyone gets to build their own.

smaller groups is almost always smoked tri tip roast (or two) and maybe a rack or two of ribs. If sliced thin on my slicer it will stretch into a rather large pile, and always fools them into being impressed. What a perfect cut of meat grilled or smoked.. but to me esp. smoked. It always has that special flavor to me, and none is wasted.

I second this. I just recently did fajtias for 40+. A lot easier than you'd expect. And as Dan stated, people can build their own.

Did a pulled smoked but and had to add a chicken for my non pork eating friends. I have to admit, this meal was good satisfying and CHEAP!!! I think I fed 10 people for about 20 dollars total!!!

Pulled pork
1 fryer chicken
half a head of cabbage
3 cans of beans
12 buns
various sauces, vinegars, hot sauces I had laying around...
and some Ghiardelli Brownie mix (Brownies for Dessert)

What really made my chicken pop was the rub I put on it. Its a hack of Meathead's Memphis Rub, but it was dynamyte on chicken.

1 T Rosemary leaves
1 t granulated garlic
1 T Sea Salt
1 T Peppercorns
1 t ginger powder
1 T Brown Sugar (I had to break this up manually)

Put everything into my spice grinder (old coffee grinder), until it was pulverized. This was enough for one chicken, and the chicken was cooked indirect for 1 hour at about 500-550 degrees on the Kettle. Add Sweet Baby Rays in the last 5 minutes of the cook, and man was it AWSOME!!
