What's the "magic ingredient" for a BBQ rub or sauce?


 
I realize that this is an OLD thread, but for the last few years, there has been one ingredient that goes in just about every sauce I make - whether made from scratch or just doctored up store bought. The juice from a jar of banana peppers. Put 1/4 cup of that into a saucepan of #5 sauce, and you've got a winner! I've used that instead of vinegar altogether. It adds a real nice flavor with just a bit of kick depending on how hot the peppers are rated. It's just a good flavor. A really good 'secret ingredient.'

When we want to add that so called magic bullet here and are serching we end up adding lime and or ginger . Lime way out does lemon specialy on fish IMo anyway . And south a the border they use a ton of it . they even have a lime based flower . Lime and ginger add the pop for us on a lot a diffrent meats . specialy in rubs the ginger is a must here .
 
I like a splash of imitation butter flavoring in my bbq sauce. Anyone tried peppermint on meat?

White pepper, tarragon, lemon pepper are some staples in my rubs.
