I'm starting to do some mods on my new 18.5 before putting it into service. Handles, grommets, lid holder, casters, handles for the lower cooking grate, etc.
From reading previous threads I take it one should use stainless fasteners whenever possible? And the reason for this is because galvanized or zinc plated fasteners can out-gass during cooking and possible taint the food flavor or worse? Same reason one doesn't weld on galvanized steel.
Does the zinc out-gass when heated as well?
I can usually find common fasteners like nuts, capscrews, and washers in stainless, but some things like the handles for the lower cooking grate (A long threaded J-hook) I'm only finding in zinc. As a practical matter, how big of deal is it to have some zinc fasteners on the wsm?
Thanks
