What's the 411 on fasteners used for mods?

I'm starting to do some mods on my new 18.5 before putting it into service. Handles, grommets, lid holder, casters, handles for the lower cooking grate, etc.

From reading previous threads I take it one should use stainless fasteners whenever possible? And the reason for this is because galvanized or zinc plated fasteners can out-gass during cooking and possible taint the food flavor or worse? Same reason one doesn't weld on galvanized steel.

Does the zinc out-gass when heated as well?

I can usually find common fasteners like nuts, capscrews, and washers in stainless, but some things like the handles for the lower cooking grate (A long threaded J-hook) I'm only finding in zinc. As a practical matter, how big of deal is it to have some zinc fasteners on the wsm?

Thanks

I don't see a problem with this small amount of metal.
If you have a torch, hit them up till they are cherry red.
That will burn off any out-gass or whatever that you may be concerned with.

Wayne, galvanized metal is metal that is coated with zinc to prevent rust! Stainless is a little more expensive, but well worth the $.

For handles on the lower grate I used stainless steel wire. Put two loops big enough to grab with gloved hands 180 degrees apart on the rim of the lower grate.

not meanin' to hijack this thread... but using "411" in this format sounds quite goofy to me.

Dang, some of you guys must be really old. I'm 48 and thought I was old fashioned.

Next thing ya know you will be telling me that you drive a Buick Park Avenue, wear suspenders, use the old guy sunglasses, and wear shorts with black socks and white tennis shoes.

Actually, I do wear suspenders so I'm easing into it already.
