What to do if your pork &/or beef are done early?


 
I've held a pork butt in a cooler, double wrapped in foil and one towel for over 3 hours. It was still too hot to pull w/ bare hands.
 
If you have a crock pot, I would pull it and put it in there on low to keep it hot.(also makes a nice bug serving dish)
 
Agreed on the double wrapped foil and towels in a cooler. I usually fill the cooler with very hot tap water and let it sit for a while to"preheat" the cooler. Drain cooler and wipe out with a towel to dry it. Then add the wrapped meat.

I've had butts that were still too hot to pull after 5+ hours doing this.
 
I have lined a cooler with newspaper on the bottom then put a towel as liner. I wraped my pork butts with restaurant thick foil (from Sams) and then topped with another towel. After 3 hours they were too hot to handle without gloves. I have heard of folks keeping them in there for nearly 6 hours.
