What should I make with these?


 
Maybe take the Hatch and jalapeno and do green chile bacon wrapped tatertots (depending on the size, you can get 8-10 squares per chile) - dips could be ketchup, bbq sauce, ranch or blue cheese dressing?

Dice the roasted poblanos and do pico del gallo with onion, tomatillos, cilantro, canned corn, guacamole and do quesadillas with the pico?
 
If you remove the seeds and membranes from the Hatch and Jalapeño chiles, a nice green enchilada sauce. Otherwise, Salsa Verde.
 
One of these days, I need to make a circuit to visit a LOT of members!!

I really dig the chili rellenos and the chili verde ideas.
Chili verde over carnitas is da bomb and I have never had a bad chili relleno.

I will add that you could be well on your way for a ceviche meal/treat if you added a bit and got creativ.
