The UPS site shows the WSM is finally in the area. I trimmed some trees and have cherry, apple tree and hickory wood. Have some Kingsford. The ribs are in the freezer.
I?m trying to hide the purchase from the wife until the ribs are done (learned the fastest way to a woman?s heart is through the stomach a long time ago).
The ribs will come out of the freezer after she is asleep and get buried in the back of the fridge.

Don't you know by now she is just being sweet letting you think she doesn't know about the ribs. Let her go to sleep. When you put them in the back of the fridge, she will know.
Surely you don't think she knows nothing about the WSM.

The WSM is a sssllllooooooww cooker. She'll have to leave the house almost all day while you cook those ribs. And if she is at home, what are you gonna say about that hickory fragrance seeping in through every nick and crany of your house?
If she's like my wife she'll say, "Oh, I know, we just HAD to have that huh?"

We do have an ECB smoker. The wife?s first comment to the WSM was ?So; what?s so special about this one?. I handed her the lid to hold. After she held the lid she said ?Oh. Now I understand?. She could tell by the weight of just the lid what the difference over the ECB is. I am also pleased with the quality of construction.
The first smoking was ~7lbs of country style pork ribs. Her comment was that the ribs were juicer than from the ECB. I was able to keep the temperature at 200 to 250 degrees at the lid during the cook. I also used a bit less charcoal that I would have with the ECB. At the end of the cook the water level was down about an inch or so. The ECB would have used more water. This was my first try with the hickory wood. Usually I cook with apple wood (from the orchard). I had to down a big hickory tree last fall and have tons of the stuff so I figured I would try it out. I think I prefer the apple. The next set of ribs I will use apple and see if I can tell the difference.
My first reaction upon opening up the unit was that the water pan is too small. I also miss some sort of thermostat. I used the one from my Weber gas grill stuck in the top vent. I did note that the WSM used less water than I expected.
I would like to smoke a small turkey this weekend. If I used the ECB I would expect it to take about eight hours and a full bag of charcoal. I would have to refill the water and charcoal after about four or five hours.

If you think the water pan is too small, you may be able to use the one from your ECB. Me and many others on this site have changed over to a Brinkman water pan as it holds alot more water and it fits better than the original Weber pan. I have several thermometers and I often use one made for the Weber gas grills. IMHO it works just as well as the more expensive ones, but it is harder to read from a distance.

The ECB is not really mine. The neighbor let me borrow it once two years ago to smoke some meat. They have left it at my house - they prefer to let me keep it as long as I smoke something every few weeks. They never used it to smoke anything.
I am concerned about the size of the pan and may order an extra (2 Gal ECB). Thanks for the note on the thermostat. I probably should check the calibration.

My husband complains because I don't let him BBQ. Not that I don't think he CAN, it's just that I am too passionate about it to relinquish the joy. I'm the one always begging for another Weber and another BBQ gadget. I was out front grilling up a couple of steaks the other night and a woman walked by and commented, "I see he's got YOU doing the cooking." Hehehehehe....... if she only knew.
With all due respect, I feel bad for you guys who have to hide and/or justify this stuff to your wives/girlfriends.
