beef back ribs. short ribs are used a little too broadly these days by the grocery stores... kinda more of a buzz-word than an accurate term. these charts are helpful I have 4-5 of them full-size and hanging on my garage wall. I love beef.

Racks of short ribs delish, cut parallel to the bone and you have english cut ribs, cut across the bone and you have flanken cut ribs or crosscut ribs.
