What’s Grilling? - Weber Summit Charcoal/ Kamado Edition


 
Last night our daughter came home for the weekend. She wanted BBQ so she got BBQ.

Pulled pork, baby backs glazed with a mix of Blues Hog Raspberry Chipotle and Head Country Chipotle. I made deviled egg potato salad, wife made baked beans and cole slaw.

Used my vortex cone upside down filled with coals. Started with the diffuser plate, but switched it out with my vortex fire plate from my WSM 14 to get temps up and speed things up. This is only my 3rd cook on my new WSK and so far I'm in awe of it.

Tried a raised platform for my ribs. Interestingly enough the upper rack was lower in temperature than the lid thermometer by about 15- 20 degrees. It started higher in temperature than the lid thermometer (usually my lid and grate temperature are very similar).

Dry brined overnight and spritzed with apple juice. Rub was Meat Church Voodoo.

Just my immediate family for dinner today, so kept it simple.

Smoked turkey breast with sweet potatoes and oven roasted broccoli and cauliflower.

First time cooking a turkey breast on the WSC- very easy. Just washed and dried the breast and put it on the smoker- peach wood chunks from fruita wood.

3 1/2 hours and done.

Last night did pork loins and baked sweet potatoes.

Pulled at 145 internal and when thinly sliced, they were fall apart tender.

Paired with a mushroom gravy that I made for the first time and the wife made some broccoli with some leftover ham pieces. Sweet potato was very lightly buttered and I added some cinnamon. We also had a salad, but I didn't get a pic of that. I forgot to take a plate pic before I started eating. lol. But, talk about a great tasting and low calorie dinner. I'm a calorie counter when I need to lose some pounds and this one came in at around 550 calories.
