Hello again!

A some of you may know, my wife and kids have been gone for a little over a week. It was fun while they were gone, but it's nice to have them back. I decided to make a pair of meatloafs for dinner as it was a little cool out, and it's a nice comfort food.

I start with a mix of lean beef mixed with egg, ice cold water, pepper, cayanne, paprika, minced mushroom, and garlic.

I've seen a few bacon wrapped ones so I decided one would be wrapped.

In to the pan to sit in the fridge for a few hours.

Here is the regular one.

On to the smoker.

And none to soon, a wicked hail storm showed up un-invited I might add.

Just about ready.

Tossed the bacon wrap on the grill to crisp up a bit.

Ready!

And the other

On the plate with some mashed potatoes, tree's and gravy, it was fantastic! The 3 smaller ones are the bacon wrapped ones.

Nice looking loafs sir! U have snow up there and it's 110 degrees here in Freer, Tx west of Corpus Christi unbelieveable.

Thanks everyone!

It sure is nice to have a place to post these cooks!

And ya Chuck is right, it's hail not snow. But it's all good, we'll take and water we can get right now.
