Was just about to ask the same thing.

I'm seeing a lot of different setups these days, and interested on why and how well it works?

Tony and Luke: I will do this at times on my Performer with the foil. Keeps the air flow on
the coals and keeps the indirect side cooler. That's the reason I do it, George may be doing
it for a different reason.
 
That is a interesting idea to use the foil. Or is it just there to keep the drippings from the birds off the grill?
 
I have used foil in the past to catch errant drippings for gravy, I usually chute it back into a foil pan. Not sure if that was the intention here but hey! it looks great!
