Excellent job Cliff. I found that if I keep in the refrigerator then put it on when up to temp, I get a lot bigger smoke ring. Also I put my temp sensor into the thickest part of the flat (from the side). This is what I do but that's just me. Thanks for sharing.

Hi Enrico.... I just try and eyeball the placement and depth of the probe. In these pictures I think it appears the probes are deeper than they really are. I'm not too concerned about the Point as it's going back in the smoker for an hour or two when I make the Burnt Ends. If you're really concerned about it see Chuck Dugas's suggestion right above this reply, it's a good one and eliminates your need for concern. Thanks again.

Thanks Chuck. That is what I've always done in the past but deviated this time as I knew it was going to be a long cook and I thought I might give them a "head start" for a couple hours on the counter. I have a 17 pounder in the freezer and think I'll go back to my (our) old way next time. Thanks again.

Chuck, I do the same of You. This is why I'm soo curious about the new Cliff's method. If You Chuck have any pic of probe action I would appreciate
