Weber ban!!! oven brisket help

I love cooking in my Weber bullet, and have been q'ing over 10 years. However, I now live in an apartment complex, and they recently made me get rid of my bullet : (

Hungry for a brisket. Anyone ever cooked on in oven? Should I use the same temp and time. Have a 12 pounder marinading in liquid smoke now and would like some input on how to proceed!
 
What happened that they made you get rid of it?

I don't know about marinading in liquid smoke, but as far as the cooking process, an oven wouldn't be any different than a WSM except you won't get the smoky flavor you'd get from a real fire. So yes, use the same amount of time at the same temp you're use to.

If you have a pizza stone you might want to put that in the oven. Not sure about your oven, but I put a temp probe in mine once and it was amazing how wide the temp variation was. If I was shooting for 250, it was easily going up to 275 and then down to 225 as the oven cycled on and off (electric oven).
 
Leslie, You can cook one in the oven. I would use a wire rack to keep it up out of the juice and fat that will come out of it, to keep it as close to how one is cooked in the WSM. Use a cookie cooloing rack or the like to keep it out of the liquid. You could cook it low and slow or do it at high heat, your choice. At 12 lbs I'll guess it's a packer. Hey it might not be perfect the first time around but take some notes and keep working at it. I cook somethings in the WSM that people question me as to why I'm cooking it in a smoker and not the oven. I tell them that the WSM is a oven only fueled by charcaol. Then I get why would you want the smoke flavor on that. Well you only get smoke flavor if you add smoke wood. Oh I see, they say.

So with your 10 years with a WSM just reverse engineer it to cook in a oven. You already thought of some liquid smoke so your well on your way to some improvised Q.

I used it here for over 3 years. They said the fire marshal came by and saw the pit. (Wasn't in use, just on the property) They made everyone get rid of their smokers/pits etc. That sucks! Looking for a house now! : )
 
Thanks! I already thought about the rack to keep out for juices, do not want mushy pot-roast! About to slather with mustard and cover with dry rub. Will let you guys know how it turns out!

P.S. Only had a Weber about 3 years, had a New Branfules before that, and various others. The Weber is my favorite, once I get a house I plan on building a brick pit.

All is not lost. Disassemble that bullet and keep
it in the trunk of your car. When you feel like it is time for some Q, take it to a friends house, or out by the lake or even to your school on the weekend and have at it.
