Want to try a pork shoulder


 
Honestly my pellet cookers give me plenty of smoke, but as in all pellet grills (well maybe the SmokeFire aside) some diminishes as you push temps. On most "normal" ones basically nothing once you push over 250. It's been explained as to why, but it does escape me just a bit. As to get higher temps you need more fuel and in my mind more fuel is more pellets and should = more smoke. But, that is in my "simple" mind. :D
Re, my butt pieces. They've hit stall. so I have wrapped them in pink paper and pushed temp to 250 and will hold that until they hit 200 or so. They seem to hae a nice bark formed and I cheated and took a little "burnt end" off and flavor was good.
So stay tuned to this Bat Channel for further updates. I may still try pulled pork tonight. But will have my beef back ribs as back up
 
OK well it got done in time for supper tonight. I left one in the cooler for an extra long rest and the other rested about 1hr&45min. In the cooler. As noted I only used S&P to get a handle on the flavor profice of the cook and the smoke from the Z. Sorry I did not shoot any photos. Hands were too greasy.
So the first piece was the one I used for some supper. I honestly ate it more like a VERY tender pork roast. And, it did not disappoint. Not saying I hit a grand slam here, but I hit a triple that scored 3 runs :D. Ate WAY WAY too much especially since my appetite has been reduced by the Mounjaro (which on an off note I broke UNDER 200lbs today for the first time in at least 7 or 8 years). Not by a lot (199) but still from pushing 240 as recently as July it's feeling good.
Anyway the piece for supper had good smoke, good bark, and was nearly fork tender.
I just about 10 min or so ago, removed the 2nd piece from the cooler and it had a decidedly softer texture. I put it into a large stainless bowl and it was basically shredding and falling apart wonderfully, and incredibly juicy as well.
I think the next piece will stay whole as I think that will be easier to manage for the cook. I ended up using 4 probes 2 in each piece one each from the Z Grill's probes and the other 2 from my new Smoke. Gotta say it performed fantastic BTW. It's a keeper.
Bottom line I think it would have still been in the smoker had I left it whole so cutting in half was a good call. I will be taking the pulled stuff tomorrow and wife will vacuum it into meal sized portions (proper meal sized not what I ate tonight) which was more "glutton" meal sized :D
I am a happy guy. So far in my pellet grill journey I have pulled off 3 whole briskets and one point, made bacon (pretty successfully), and now pork shoulder. All the things I said I wanted to do when I got one but was a little "fearful" of and did decent jobs on all.
I am hoping to pull off back ribs this week. I have been unable to find back ribs of decent enough quality. Though at our little market they had some in the freezer case they swear by. I will see on Wed how they are. Though I am sure if I got the ribs from the place in Arlington Hts I would not have the trouble.
Anyway I feel I have made accomplishments Sort of like Capt Kirk :D
 
So, how’s your Dad?
He is improving. Swear he's like an old war horse. 2nd scare in like 6 weeks.
Sadly we did lose our friend and neighbor Fred this past Friday. He'd fallen just over a week ago. we found him when he tried to call me but could not speak. Wife and I worried went there and found him on the floor in the bathroom. We called the EMTs they were at his door literally as I was putting down the phone.
Turned out he had the Covid. He too was improving and then mid week even though he was technically over the Covid, his O2 levels fell, even with large amounts of O2. wife caught it from him, oddly I did not. Thankfully it was about like a bad cold for her and she's back to normal after a few days. But it feels like we've lost family.
He's sorely missed
 
Larry, So sorry about the loss of your neighbor friend. Glad, though, that your Dad is improving. And, hats off to great cooking and losing weight at the same time. I know some people say you can't have BBQ and the like and lose weight. You can, however. Some of the "other" stuff has to go and be replaced by healthier choices. Not easy, as I have been trying and finding it so easy to fall back into bad ways. Pulling for you (I guess for me, too:sneaky:) to stay on a good routine that you can live with long term while getting to the weight you want to reach.

This stuff is kind of pricey, but it has helped me as a one meal a day replacement. It is not some kind of diet magic; they don't claim that. Just healthy and an easy way to have a low calorie meal or maybe replace a bad choice later in the evening!

Hey that is an interesting idea. I remember there was a Shaklee product I had used way back (on one of my many fat go rounds and trying to lose) it too was a shake. I replaced 2 meals a day with it and ate a light dinner. It got a lot of weight off me. But, oh buy the gas, bloating and other (shall we say) indelicate matters it gave me. :D
WHat Mounjaro is doing is heloing me train my body to be full with far less intake. Doc hopes he can get me off most if not all meds once I get down to a target weight and the habit of being full with less will stick.
Meantime the good Q will continue :D Just now the freeer and vacuum sealer will eat more than me.
