Venison Roast

For my help butchering a deer, I am getting a hindquarter roast. Any suggestions as what to do with it? What temp to cook it too? It is an extremely lean piece of meat.
 
Several ways to cook.
1) sear then braise in Dutch oven & make gravy
2) cut up into small thin pieces , tenderize, & chicken fry
3) smoke whole & thin slice into sandwich meat.
 
I was hoping to serve it whole or in steak form. Seems a waste to turn everything into burger. So option number 1 sounds very intriguing.
