The big ones are Chili Costeno and the two little firecrackers are Chili Puya

Soaked in warm water for about 20 minutes, then de-seeded - *** WASH YOUR HANDS WELL *** A public service announcement

Roasted then for a few

Then into a blender with four cloves of garlic and a can of plum tomatoes

Strange weather today, snow then sun, snow then sun

Venison Steak cubed and 2 lbs. ground venison

One large onion chopped and into a CI with a little EVOO, after they soften two tbsp of flour, then add and brown meat

Some Oregano, Cilantro and the chili paste

After two hours done, some yellow rice with black beans on the side

Your dish with some Colby and Monterrey Jack shredded on top

That is some tasty lookin chili! I'm probably the only one in my family that would eat it though. To hot for the wife and kids. More for me!
Sometimes in Colorado we get snow and sun at the same time.
 
The heat is what I would call medium at the highest. The CEO liked it and so did #2. I have some other Chili's that are much hotter but held off for this meal. maybe next time.
 
Great lookin' chili, Bill. I don't know that I'm so keen on roasting dried chilies. The last few times I've made a roasted tortilla salsa, the roasted chilies were a bitter component. Seems to turn out better for you?
 
Thanks Guy's it was real good, I made a big dent in that pot last night.

And Brian, I think you might have roasted to much, or were the stems on when you did them?
I never get any bitterness but I am only roasting them after they have been seeded and stemmed and are soft from the warm water. Then I only do them for a few minutes to they just start to firm up a little.
 
Like all the meat in your chili Bill. I'll bet the heat was fantastic. It definitely has been chili weather too. I would definitely try a bowl if I could. Nice post.
 
Cilantro. . . . THAT'S WHAT I'M MISSING IN MY CHILI!!!!!
That's some good looking chili. I figured with those peppers it'd be fire hot.
