Great, thank you to all, appreciate the responses. I have a 20lb bag of Weber briquettes that I'll be using. I also have another brand (local, Australian one, which i've used for lamb & pig on the spit) of 20lb briquettes that'll be on stand by. But yes, point taken re using quality briquettes.
