Use Rib Racks or the Middle Grate?

I'm going to be trying the BRITU recipe this weekend, and I don't think I'm going to be able to fit all the ribs on the top grate, even when rolling them.

So my question is: can I cook on both the top and middle grates of my WSM? Are the temperatures on both grates close enough that I can use them both simultaneously?

Would I be better off trying to fit everything on the top grate and using rib racks?

I haven't tried cooking on that middle grate yet, so I'm not sure how it will perform. Looking to hear about other experiences.

Only two cooking grates (top & bottom) unless you did a mod? I cook my ribs on both grates. The bottom grate is usually a little cooler than the top. I've never had any problems. I usually cut my ribs in half and use my Weber rib rack.

If you are using the WSM with water, the lower rack will be a little cooler. It shouldn't be a problem, however, you might want to rotate the ribs mid-cook just to get them to finish at the same time. Personally, I wouldn't bother, but given your question, that's the one thing you might want to consider.

How many racks are you doing?
 
The middle or bottom grate should be fine. I t does run a tad cooler. May need a little more cook time or just put the smaller ribs down there.
 
Great- thanks for the info. This will be my first attempt with the ribs. I might be able to get them all on top with a rib rack... gonna find out. If not, I'll try putting the smallest ones on the middle grate.

Any guess how much longer it might normally take for the middle-rack to fully cook? Are we talking about 5 minutes or 30 minutes?
