Did this cook last week, a bit different so I thought I'd throw it up there. Did one bird Simon and Garfunkle the other using Pappys. Brined them overnight and cooked around 275 over pecan. Seem to be on a bit of a pecan kick lately. The mashed potatoes are cedar planked, made a few too many. Great method for making potatoes. The smolder cedar, the oozing cheese, so good.
