Two chickens no water pan


 
Yesterday I decided I was going to BBQ a couple chickens and a bit of boneless pork shoulder. I didn't get back from the pub late and 2 hours to get the food on the table, oops. So I decided to fire up 1 chimney of the leftover lump leaving a scattering in the bottom, remove the water pan and cook as hot as possible. This was a very good idea. The chicken was done in just over an hour, the pork stayed on til the coals went out. Best of all was the flavour, I will be doing chicken like this from now on. No wait, best of all was that I was able to get the food on the table at the expected time

Just thought someone should add a this little note: Don't forget that the food on the bottom rack will brown much more quickly without the watter pan in there. I have added a rotation from top to bottom after 25 min on this wide open chicken method.
