two baby back racks

Two baby back racks, one i did just last week... it was soo good i decided to do it again.
the first, seasoned with Penzey's BBQ3000 and Stubb's Chilé + Lime Rub.

The second rack, used the same BBQ3000 and then a salt-free fajita seasoning, generously.

Set up the 22.5 WSM with Kingsford and cherry and apple wood for smoke...
thin slices of limes adored the fajita seasoned ribs....

Yes, the limes DO add flavour!
after 3 hours...

well, we waited for another 2 more hours before we determined the ribs were perfect...

and they were close.
served with fried potatoes and onions with slow cooked baked beans (sorry, no photos of those in progress

Nice to have you back Jim! This board isent the same without you. Perfect looking ribs mate. Will try that lime thingy out next time i cook ribs. But if i remember correctly you have done it with oranges aswell?
 
I second Wolgast comment..I was thinking we would have to send out an amber alert. Nice rack of ribs....did the same with the firepit last nite....where is the rain...

Great trick. My mom used to roast spare ribs in the oven with slices of onion and lemon. It was delicious.
