Excellent looking bird Chris!!! What is the benefit of adding baking powder to the outside of the turkey provide?
 
What is the benefit of adding baking powder to the outside of the turkey provide?
This is a common practice lately in poultry recipes from Cook's Illustrated. Baking powder dehydrates the skin and raises its pH, which improves browning. Also, they poke holes in the skin to help rendering fat escape. Seems to have worked, the skin was some of the best ever.
 
I'm new here and to the WSM. Still trying to get a feel for the capacity of my 18" bullet. How big was the turkey and am I correct at thinking that's the 18" WSM?

EDIT: Forgot to say that it does look tasty! You thin maybe I need to stop checking this site when I'm hungry?
