Cooking 14 lb turkey that has been butterflied and split into halves. Brined, injected seasoned. Sand in water pan. Kingsford w/hickory chunks.

1. Skin up or skin down?

2. Bottom rack skin down. Top rack skin up.

3. Both on top rack.

4. Both on bottom rack

I also have one butterflied for the oven. Will put on broiler pan, pan over stuffing to catch drippings, roast at 450? for 90 minutes. Should be some great stuffing.

I like to cook on the top rack with the skin up for appearance and a crisper skin.

If the temperature at the bottom rack is high enough, you could use that just as well.

HI Bruce!

I have used the CI method the last couple of times. Breast side down for the first part of the cook then turn it right side up.

This helps to self-baste the breast meat, then you flip it to crisp the skin up.

Of course, I still do ours on the grill or in the oven.
 
I started it about an hour ago. Cooking along at about 275?. Butterflied and cut in half. Both are skin up on the top rack. I think I will go for a couple of hours and then flip and remove the sandpan. Add a little lump and see what else is going on.
