I sent my wife to the store to get some turkey legs for dinner and this is what she brought home, 8.5 turkey that we did on the rotiss last night. Turned out just right.
These guys are right…I do see turkey legs. Here’s a picture of a bird I did. I brined it for 24 hours with among other things jalapenos and red pepper flakes. I mixed my rub with mayonnaise and got as much under the skin as possible. Then more rub and wrapped in bacon. I smoked it with hickory for 6 hours. I chopped up the bacon and severed it with the sliced turkey. Next year there is going to be a lot more people at the house for the holidays.
