Turkey Breast questions

I am doing two 8 pound breasts that I want to brine tonight, (standard brine).
Is 12 hours (overnight) too long to leave them in the brine?
How long would you guess the cook time would be at 325?

Any help is appreciated, it has been too long since I fired up the WSM

12 hours is fine. I try to get mine out around 12 hours, but have had them in there 15-16 hours with no ill effects.

I cook mine at lower temps and that size breast would take me around 3-3.5hrs in the 245º-260º range to hit 160º. So I would guess, yours cooking at 325º would be done around 2.5-3hrshrs.
 
I've brined turkey breasts as long as 18 hours w/ no problem. At those temps, I'm usually looking at 2-2.5 hours or so.
 
Have you noticed a different texture in the poultry when you brine? It feels spongy. Any suggestions? I did use the common brine for 8-10 hrs/
