I'm using a rub for my first butt and it calls for brown sugar.According to others on this board they say to use turbinado sugar which i have. The question is it an equal swap? say for instance... 1 cup for 1 cup swap any help would be greatly appreciated

My opinion is: Yes. 1 cup for 1 cup.

Turbinado i guess is less refined then brown sugar. And i often use Muscovado(spell) in my rubs. The more unrefined the better taste(for me..Aslong as we talk rubs)

But a rub with this have to be stored in a air tight bag or it will make one big lump of everything. My 2 cents...

Turbinado sugar is raw sugar that still has the natural molasses in it. It is sometimes called Demerara sugar.

Brown sugar is sugar that has been processed to white sugar and then had some molasses added back into it.

It's also less sweet than white. If the recipe calls for turb, don't substitute.

Keep in mind that you might sub brown sugar but remember, it'll be sweeter than using turb.

I prefer turbo but sometimes don't like how large it is in certain rubs. I have been giving it whirl in the food processor lately to break it up and have been happy with the results in my rubs. Something to try.

Turbinado sugar has more moisture than refined white sugar, but it does not contain as much moisture as regular brown sugar, which can cause lumps or clumps when mixed with fine ingredients in a dry rub.
