Tuesday Pork Tenderloin

Regular supermarket pork tenderloin, butterflied and rolled with ground Italian sausage, mozzarella and spinach.

It's Tuesday, so quick and relatively easy.

You can roll the tenderloin and tie it in place on the spit rather than tie then poke through.
It’s not a technique that I’ve used but, I understand many have.
