Re-tried doing a fattie this last weekend. This time I did two regular size ones and gave the new 22.5 WSM its maiden voyage!!
The obligatory weave
Topped off with Farmer John mild sausage
Topped off with pulled pork
Next some Ranchera cheese with onions and cilantro
This time I rolled the fillings up first into a big old poke
Rolled and seasoned
On the WSM with a apple mini split for smoke...ran at 260 with no water in the pan
at 165 internal I slathered em down with this:
