Tri tips, Caesar salad, homemade croutons and roasted cauliflower- feeling motivated today

Costco fresh baguettes cubed, seasoned and oven roasted for croutons.

Three tri tips of varying size. Added dry rub ingredients and then splashed in some red wine vinegar and evoo.

Tossed, mixed and marinade evenly distributed. Will let these sit a few hours before grilling over wood and JD.

More pics to follow later as this comes together. Thinking a nice cab sauv. Weather is near perfect today. 66°, sunny, with a breeze and mostly no clouds.

Very happy to watch football from the comfort of my couch! Dinner is cooking in the oven and beer is available.
 
Looking good as always, bet it tasted amazing.
I ate like a king all weekend too.....trying to keep it up all week again......longer meals during the week are not my favourite of course.....tonight is some version of chicken tikka....not on skewers with cauliflower rice....
I need to investigate a bit on what to make with what I have...

The idea was nice bbq with char on bone in skin on thighs.........spice to be decided.........I don't have yogurt or anything like that for this dish, or the time to marinade it in that.

Cauliflower grated to a rice consistancy.......
Diced onions to match the size of the cauliflower.......
Same with some cloves of garlic.....
The caulifower takes fairly high heat with some oil and fry's up pretty good.....any additional spice takes on pretty good too... ( I am new to this )
I have the Ardvark black bean sauce and it is salty, it works good if I am going towards a more Latin inpired dish..... for an example.

The sauce is a super clean pre made sauce. Ingredients read to be as just about 100% veggie....
It fits my November eating approval. I know pre made is pre made but again it is mid week meals and with what I really can eat I was looking for some new flavours...pic below....

I AM SUPER OPEN TO SUGGESTION ON WHAT I CAN MAKE THAT COMES OUT OVER THE TOP WITH WHAT I JUST DESCRIBED.

Tri Tip looks perfect!
Thanks! These came out great. Flavor was classic Santa Maria. Cooked with a big hunk of white oak and JD, it had great nose without being too smokey. Sliced thin so we can have some sandos today too.

I missed the pics of the roasted cauliflower. It was SPG and reggiano parmesano cheese and a light dash of EVOO.

We plowed through 6 heads of romaine hearts and two Costco baguettes as croutons. Dinner was 8 adults. Also 3 bottles of red wine I didn’t get a pic of the first bottle though.

That sauce looks clean. I’d buy it if I bought jarred sauces. Chicken tikka is always a good meal. Very filling and flavorful.

So I’m stuck with leftover Caesar dressing and lime 10 croutons. Literally we crushed 6 heads or romaine and 95% of two baguettes of croutons. At least I have a few slices of TT for a dinner sando.
the wife bought more romaine so we can finish the caesar dressing. but we're out of croutons. oh well.
