Tri-Tip Tacos

We cooked a tri-tip for tacos last night. We started with a marinade of chipotle peppers, the adobo sauce (someone should sell jars of just the sauce) limes, oranges, cilantro, spices and some olive oil

here's the cut before going into its bath - it had some great marbling..

while the meat soaked, I made up some salsa - I roasted garlic, tomatillos, Anaheim and Fresno chilis, and a white onion on the gasser...

later on it was time to throw the meat on. Did it sorta indirectly with the fat side in. Mixed up a couple of ranch waters, and just let it do its thing.

i think it took about 45 minutes? maybe a little more - I flipped it a couple of times and cooked to it 125.

let it rest for a couple of minutes and got slicing!

and plated with some rice and beans - I really like tri-tip! We have a lot of leftovers so I sense some dirty fries in our future for today!

Doris had made macarons - so a little dessert was in order...Cheers everyone!

Outstanding cook, Peter. I agree with you on jarring and selling just the adobo sauce.

Ranch water has become a common cocktail around here. So easy and so delicious.

I’m sure someone sells just adobo sauce. I used this recipe a couple years ago when I wanted a decent amount for a marinade.
