Tri-tip question

We have to do mothers day tomorrow (Saturday) since my brother-in-law has to work Sunday. I have to do about 10 lbs. of tri-tip for the event. I also have to take my grand daughter (3 1/2 yrs old) shopping Saturday afternoon for a present for her mother. I am doing the trii-tip at my house and have to transport it up the street to the in-laws house at 4PM. So the question is this, how long can I hold the meat in a cooler. In other words, how early can I finish the cook so I can still take my grand-daughter shopping, and not degrade the food? Haven't decided whether to use the WSM or the Performer for the cook.
TIA

Tri-tip doesn't take that long to cook & only rest mine for 15 - 20 minutes before slicing. It might be better to take your grand daughter shopping earlier in the day? I'm not sure how long you can hold them, however a local market cooks them outside every weekend and I suspect they sometimes sit for an hour or so before they get sliced as I often see two or three that are cooked sitting on a warming shelf of the grill.

It takes me approx 45 minutes to cook a TT to med rare. TT tastes best fresh off the grill with a rest time of course so if you can swing it take your grand daughter shopping early in the morning. at 3.5 years old I'm sure she is up before you anyway.
