I haven't been on here in a week or so. Not for any particular reason, just busy with other stuff.
On Saturday I did some beef back ribs on the SmokeFire, which turned out very tasty.

The forecast on Tuesday was for temps in the upper 60s and dry, but of course they got that wrong and it stayed in the 50s with rain all day. That didn't stop me from cooking a 10 lb pork butt on the SmokeFire and some pork belly on the WSM.
The pork butt went on at 5:15 am at 250*. It was done after 14.5 hours and a full bag of apple pellets. It fell apart when I lifted it off the grates.

The pork belly had been curing in the fridge for 10 days and I put it on the WSM mid-morning at 200* (snake method with my ATC) and that was on until it was 150*. I don't remember how long that took but it was probably 4 hours or so. This is when it was cooling before I put it in the fridge overnight. I sliced it last night and had some for breakfast this morning. Very pleased with this result.

Even with the rain this was a fine day.
