Too hot to smoke cheese!


 
Ok so the other day I tried smoking some cheese but its 96 F here in Houston and even with one piece charcoal my WSM gets to hot and the cheese starts to melt. Anyone know of a way other than the cold smoke induction to keep the temp down? Thanks.
 
Hi heat's really popular here. Just put a pan on the bottom grate to catch it as it melts.

You really need to keep the temps inside the grill below 100, so when you're starting at 96 it's probably close to impossible. The harder the cheese the higher the melting point, but that's still going to be tough.

Before I had firebricks to isolate the hot coals and wood, I used to smoke cheese on a cool winter night and when the cheese started to get too wet and shiny (starting to melt) I would pull it off the grill and sit it out in the cold too cool off. You could try moving them to a cooler or a freezer to harden and smoke in short intervals, but again that's going to be tough without melting it. At least in Houston in August....

and unreal humidity . pose to stay that way for a few more days all week end , We been eating a LOT a salad . Iam not standing out over the grill in this crap . This is Michigan the heat won't last much longer thank god ! I much prefer any of the other 3 seasons . Fall being my fav !

NO way would I try to cook never mind smoke cheese in this dang heat .

I had no choice I had to cut myu grass today and that was the end of me for the day . The wife did a cold chicken salad and I fell out in the Lazy Boy forget it I will go back outside Monday MAYBE
