I got a request to smoke some "salmon" for my mother in law, who is approaching 90 and a stroke victim that my wife cares for several days a week. This should make her happy. Smoked at low 200s for just over 2 hours with cherry wood to about 150f.
Technically, this was Costco farm raised steelhead. My wife's mom doesn't eat a lot these days and likes pretty soft foods. This fillet was just oozing juices. I cut her off 2 pieces about 1 1/2" wide and also gave her the remainder of the belly strip. I think I'm going to move up a notch on her list of favorite cooks in the family. My wife is heading over to her house now to care for her tonight and this will be her dinner.
