I almost always add a pint of sweet or breakfast stout to chili. Something malty, not hoppy or bitter.
And for a sinfully good dish.... beef Carbonnade. It's a Belgian beef & onion braise, also made with a malty beer. My g/f occasionally makes noises about going vegetarian, I'll either grill her up a good steak or make beef Carbonnade, and those noises stop for a while.
