Tire Tread Potatoes​

INGREDIENTS​

4 large baking potatoes, Yukon Gold is preferred.
3 tablespoons butter, melted
1/2 teaspoon paprika
1/2 teaspoon ground chile (I use ground California chiles, Hatch is good too.)
1/2 tablespoon onion powder
1 teaspoon garlic powder
Salt and pepper to taste

DIRECTIONS​

With a sharp knife, cut potatoes in half lengthwise.

Score the cut side with a sharp knife. Repeat the cut but at 90 degrees to the first cut. Cuts should be 1/2 to 3/4 of the thickness.

Place in a sheet pan cut side up.

Brush potatoes with butter.

Sprinkle with paprika, onion, garlic, salt and pepper. Chile powder is optional.

Bake, uncovered, at 350° for 50 minutes or until tender.

To grill the potatoes, score the potatoes and then par cook (microwave for me). Then butter and spice. Cook over medium direct heat till browned and cooked through.

Serve with sour cream and chives….

Ditto for me! I like the grill option, but would probably skip the par cook. I do potato halves that way all the time -- almost a fluffy fry. But I use my upper grate -- not likely to burn. Thanks for sharing!🙂
