Thunder storms and sideways rain

Yesterday I had planned to test out the CampMaid 4in1 set with some smash burgers.

Mother Nature has other plans. Rain, lots of rain. Wind, thunder, you know perfect grilling weather. I already had the Blackstone set up so it was the cooker of choice.
Made some chibatta rolls for buns. Home made baked jojo’s and strawberry jalapeño margarita.

Love the cheese skirt on those burgers Case, and the rolls look killer! What did you coat the wedges in, Panko crumbs?

Olive oil and seasoned Panko. Cut taters into wedges place in casserole dish and cover with Saran Wrap. Nuke for 4-6 minutes just until edges start to be translucent. Rinse taters in cold water. Usually I’d use equal part Panko and grated Parmesan but we didn’t have any parm. Seasoned with lowry’s seasoned salt. Press taters into Panko mixture to coat. Place on greased baking sheet or parchment. Bake in 400 degree oven 15-20 minutes. Flip taters and cook another 15-20 minutes

Thanks for the info! Gonna do that on the performer with some baby golds and reds I have.
 
Fine-looking burgers, Case!

Interesting that you used the term "jo-jos"...the only places I can recall seeing it used to described potato wedges like that have usually been in Indiana and Ohio.

In my wife's hometown there is this weird flea market/farmers market. For example the best meat market and across from it is a used vacuum store. Anyways, at a little food vender they sell Jojo potatoes and they a to die for. Her family no longer lives it that area so we try to go back every few years and always get jojos (and some of the best donuts at Yum-Yum's). I have never tried to make them at home, but seeing your homemade ones made me think I need to try. May I ask for your recipe?
 
Is that Whataburger jalapeño ranch I see. My family and I are suckers for anything Whataburger especially since we were in one of there commercials last year 😁
 
My kind of eats Case, looks great. We make Jojo's but here we call them home fries. Use olive oil and usually one of the Weber seasoning put on a cookie sheet and bake them on the E320 gasser about the same way you do. Change it up almost every time.
 
I usually coat them in EVOO and Onion soup mix, and then roast in an aluminum pan on the Performer. I am going to try adding the Panko to the mix though.

For real jojo's I deep fry them.

A simple dredge of flour (1/2-1 cup) then whatever spice you want. You can really get crazy. I added onion powder, garlic, salt. Pepper, celery seed, paprika to this batch.

I half, quarter and quarter again the taters into wedges. This batch I dusted with Old Bay seasoning prior to the dredge.

Drop some peanut oil into the Disco and fire it up!
