Third cook; first reverse sear steak

Continuing to experiment, I decided to reverse seat a couple of T-bones starting in the WSM and finishing on the grill.

Started with close to a whole chimney of Kingsford Competition charcoal (this is the only time I pined for a smaller bullet; using the 22.5 for a couple of steaks almost felt wasteful, although I got over it quickly). Waited until the temp got to about 240F then put the steaks on. Had to make a daughter pick up; by the time I got back 20 minutes later the steak was at 120F. By then I had another chimney fired up for the kettle. Threw some foiled potatoes and corn on the grill for 20 minutes. After they were removed, the steak (which was up to 130F) got the reverse sear for about two minutes aside.






I probably will get the steak off the smoker sooner next time, but the end result was tender and delicious. Damn shame the wife doesn't eat steak; her loss.
 
Anthony - nice technique on your first reverse sear. That steak looks just about perfect to me.
