Thinking about cooking...


 
I want to do a brisket and a couple of butts in the same smoker. Should I put the brisket on the top or the bottom? I use the factory set-up with water in the pan. In the past, I've basically only done butts and chicken. I've not done a brisket on a smoker, and I was wondering if it's feasible with butts in there too. I usually keep the butts around 240-260 lid, but with the brisket on top would it work better to have it be more in the 275+ lid...? In other words, is it feasible and how would you do it if you did? Better yet, how have you done it in the past?

Also, what's a good all-around wood that I could use for this cook? I really like hickory in pork but like I said, I've never messed with brisket. I don't have much access to wood right now, but all ideas would be most welcome!
 
Here's a link to my first brisket. I see that I didn't note the temperature but my habit has been to try for around 250 at the grate.

That's an easy cook, don't sweat it! You'll find that a lot of people cook butts over the brisket, but I prefer to put the brisket on top. The main reason is there is so much fat in the pork it alawys drips down and washes off my brisket rub.

I think the cooking temp depends on whether or not you are wrapping your brisket during the cook. I wrap my brisket during the cook and like to start off low ~ 225 until the internal hits 165. Then I will wrap the brisket in HD Foil, crank up the cooker to 275ish and cook until done which is usually 200 internal for my liking. That said if you don't want to wrap your brisket then I would cook at 230-240 the whole time until it's done.

I would focus on controlling the cooking environment with the brisket in mind. The pork butt is a lot more forgiving and in my experience will cook great at temps from 225-275.

For wood, you might want to try hickory with a lighter wood like cherry or apple.

I'm no expert but that's how I do and would do it.

The kids at church want us for the weekend, and they're just a few chromosomes short of being our children anyway... it's hard to say no.
