Thanks Craig! I did a screen shot of the rub. I was out of Paprika at the time and didn't use any cayenne (too hot for my wife's taste) but it still tasted great. For Stove Top Suffing, I double the butter to two tablespoonsExcellent idea! Simple and elegant. I shall call it Pork Chops à la Val when I make it later this week.

The stuffing is very easy to make before you cook the chops - it takes 5min. You simply bring out the pot of stuffing with an ice cream scoop and immediately after you flip the chops you scoop a ball of stuffing and sort of mash it on to the top of the chop. It's best to close the top of the grill to re-heat the stuffing on top of the chop (a little toasting is OK as long as you don't over-cook the chops). Enjoy!
