guys - pardon the dumb question - but on the dot, you stick the probe in the meat, but where does the clock part live/sit? And second question - can it engage two probes at once, so one goes in the side grommet of the WSM measuring smoker temp, and a second goes into the meat?
 
The Dot only has one probe only. It does not have a timer at all. It's sole purpose is to monitor meat temp. You can set a target temp and when the meat temp gets to the target temp it will sound a warning. That is basically all it does but it does it very well. Thermoworks has other units that have 2 probe inputs that will work the way you are asking.
